Pumpkin Spice Tease Tea Pancakes

One of my favourite benefits of Fall is the freedom to turn on my oven and bake without being unbearably hot. As much as I love cold and refreshing salads and snacks, there’s something about a warm meal that’s both satisfying and comforting. Especially if that meal happens to be breakfast!

Loose leaf tea is such a versatile staple to have on hand. Of course, you can drink it, but you can use many of our loose leaf tea blends for skincare, and to add something special to your cooking.

Since we’ve recently released our new Fall collection, we thought it would be the perfect time to give you one of our favourite Fall-inspired recipes: Pumpkin Spice Pancakes. Yum!

Not only are these pancakes delicious, but they’re also simple to make- and that’s a major win, in my books.

If you have a little one at home, then you know all too well the difficulty of trying to cook whilst also entertaining. This is a great opportunity for them to participate! Letting your child stir some of the ingredients or pour the (pre-measured) ingredients into the bowl can be an empowering and fun Fall activity for the whole family.

Now, let’s get into the good stuff!

Pumpkin Spice Pancakes

1 Cup           Oat Flour
2 Tbsp           Coconut Flour
1/2 tsp         Baking powder
1 tsp             Baking soda
3/4 tsp         Cinnamon
1/4 tsp         Nutmeg
                    Pinch salt
1/2 Cup       Unsweetened Apple Sauce
3/4 Cup        Pumpkin Spice Steeped Tea (Steep 2 servings of loose leaf tea in approx 1 cup of boiled water)
1 tsp             Vanilla Extract
2                   Egg whites
                    100% Maple syrup

Tease Tea Pumpkin Spice Loose Leaf Tea Pancakes


  1. Steep your loose leaf tea for at least 20 minutes in boiled water. (You can leave it to steep while you start prepping your ingredients and even make a little extra to drink while you cook!)
  2. Combine dry ingredients and mix well.
  3. In a separate bow, combine wet ingredients and mix until they’re well combined.
  4. Combine the wet ingredients to the dry and stir until the mixture is even.
  5. Let your batter sit for a good 5 minutes to allow it to thicken slightly. If the mixture is a little too thick, you can add in more tea.
  6. Spray your favourite pan and cook your pancakes on medium heat. The first side will take about 3 minutes, and one it’s begun to bubble on top and the sides have started to brown slightly, it’s time to flip and cook for another 1.5 minutes or so.
  7. Top with 100% maple syrup for a little extra decadence!
